Creamy Vegetable Curry

Creamy Vegetable Curry
Vegan, Gluten Free, Wheat Free, Rice Free, Soya Free, Refined Sugar Free.
Endometriosis, Crohns & Celiac Safe.

I love making this for my family and my boyfriend thinks this is gorgeous and hes a rugby player and is a meat eater. 
This is a creamy, filling no need for rice or meat curry, all of my family say they don't miss the meat or the rice with this as it is thick and yummy.

Ingredients:
7 smallish potatoes
1  red onion
3 cloves of garlic
1 tin of tomatoes (chopped would be better, plum was all i had in the cupboard)
Pataks Balti curry (the only one thats safe)
1 tin of Amoy coconut milk
about a 1/4 a packet of vegetable mix
1 tbls Olive Oil

Serves: 3

 Prepare your potatoes, garlic and red onion .

Put your potatoes on to boil.


Add your garlic and onion to a pan and add 1 tbls of olive oil.

Fry them until they are soft.
 Once they are soft add your coconut milk, balti curry and tomatoes.

If you only have plum tomatoes add these first before the curry and milk so that they are easier to chop up.
 Once you have brought the whole pot to the boil turn the heat down to simmer nicely.

Add the frozen veg and cooked potatoes.

I like to mash a few of the potatoes and add them to the pot as it helps thicken the curry.
Once your curry is boiling hot, thick and smelling delicious serve right away.









Add a sprinkle of herbs and you are finished to enjoy your meal

  1. Thank you for sharing this and all helpful information. I've only been diagnosed with endo and I am up for changing my eating habits and do the recommended healthy diet. I know it won’t be easy but looking, searching and reading a lot on the internet, I found out that there are healthy - wheat, gluten- and dairy free alternatives.
    I will definitely cook this lovely recipe this weekend!
