3 Way Fish Cakes

3 Ideas for Fish Cakes 
Vegan, Gluten Free, Wheat Free, Rice Free, Soya Free, Refined Sugar Free.
Endometriosis, Crohns & Celiac Safe.

Ingredients:
3 sweet potatoes
1 red onion
1 tin tuna
2 tsp pure spread
extra virgin olive oil
2 heaped tsp GF flour
(for a big bag GF flour combine-
200g sorghum flour
200g millet flour / Buckwheat flour
300g arrowroot
300g potato starch)







Chop up your red onion.



peel and chop your sweet potatoes.










Put your sweet potatoes into a pan and cover them with water.
cook until just soft enough to stick your knife into them.


wipe a little extra virgin olive oil into a pan.
turn the heat to low-medium.

add the onions and cook until soft add the tuna, turn the heat off and stir them together.















Depending on which you want to make or all three divide the sweet potatoes into three lots.







The first tuna cake i am going to bake in the oven.

Chop your sweet potato into smaller chunks and add some pure spread and mix that together.

Add your tuna mix and combine.


























Once mixed together you can add the mixture to crumpet rings that are on a baking tray.
























Put the tray into the oven to cook on gas mark 5 for 25 minutes to turn really brown and crispy on the top.

















Take them out of the oven when they are nice and crispy, run a knife around the edge and gently push the cake from the mold.




















For my second fish cake i am going to cook them under the grill.






















Mash your sweet potato with a little pure spread and add you GF flour, mix these both together well.






Add your tuna mix and combine.

Make little balls by taking a little of the mixture and  rolling them in the palm of your hand.

Place the balls onto your foil on the grill and gently press down on them making them into patties.





 Put the heat on medium and cook for approx 10 mins each side of until they are crispy and brown.






The last fish cake is going to be stuffed.
Lastly mash the sweet potato with a little pure then add the gf flour and mix.

Once you have that all mixed in together. you can form your nests.

form a ball with the mixture and with your fingers push into the center making a ditch.



Fill the ditch with the tuna mixture.




Now make a small pattie big enough to cover the tuna, push down the sides to seal the mixture inside.


You can either bake or grill this stuffed fish cake.

The best one for me was the oven but they were all lovely.
