*What keeps you motivated?
What keeps me motivated? My daughter. I can’t exercise no energy and diet helps but it’s on and off depending on my busy life

*Can you give me one positive thing/thought that having endo has given you?
The positive thing that Endo taught me is to not count on others to be there for you but to stop and realize there are just some things I can’t do anymore. It took me 23 yrs to realize this.

*what is your go to thing that will make you  instantly happy every single time you do/go to/have/are with it?
The things that make me instantly happy is hanging around my friends that make me laugh, my dog, and softball

*If you could give advise/motivation to a fellow endo sister what would it be?
I am not sure how I could motivate fellow Endosisters as I can’t motivate myself

 *One thing/person that is inspirational to you and why?
My friend Gail that I met on Medhelp is my inspiration. She is on her 3rd relapse of ovarian cancer and she always is happy and inspirational to others. It makes me feel that I shouldn’t complain because she is facing death head on while I am just facing pain.
 *What is your favourite excersize to do that you find eases your endo pain?
No exercise eases my Endo pain to be honest. If I have to push myself I will play baseball to be active but end up regretting it later.
 *And finally have you a favourite endo friendly recipe you'd like to share that makes you feel great?
My fav Endo recipe that makes me feel great, well I like juicing so I take celery, carrots and beets. That gives me energy. Also this one http://cookingwithwice.blogspot.ca/2013/07/roasted-tomato-with-avocado-hummus-and.html

Energy boosting, Pick me up:
 Pineapple & Ginger Smoothie/ Dessert
Really lovely warm too

Ingredients:
1/2 Pineapple
Cube of Ginger
1 Sweet Potato cooked
2 Beetroots 
1/4 Tsp Cinnamon 
1 Tbls Thick Coconut Milk 
2 Tbls Pea Protein (optional)
Sprinkle of Cinnamon for topping
Smoothie:
100ml vegan milk
Juice of 1/2 beetroot




Peel and Chop your sweet potatoes and put them into a pan of boiling water for 20 minutes or until a knife can slide easily through them.


Once cooked, drain them.




Add all the ingredients to your blender. 

Blitz until they come together into a smooth thick mixture.

Add your dollop of thick coconut milk and sprinkle cinnamon onto the top.



For the smoothie



If you want a drink instead of a dessert, just add to the above mixture the milk and blitz again.

Add more if it is still too thick for you.






Pour into the glass, then if you want the beetroot latte-esque look then slowly pour your beetroot juice around the top and it should sink down into a ring.

sprinkle cinnamon on the top.
