ZESTY LEMON CURD
Vegan, Gluten Free, Wheat Free, Rice Free, Soya Free, Refined Sugar Free.
Endometriosis, Crohns & Celiac Safe.
Make sure you have a clean glass jar and of course lemons!
Ingredients:
60ml water
4oz unrefined sugar
5 tbls potato starch or corn flour
60ml real unwaxed lemon juice (same as 2 lemons)
2 lemons worth of lemon zest
Makes: Around 100g (nearly fills a pataks paste jar)
Put the heat on medium.
stir constantly until the mixture comes to the boil.
quickly turn the heat off and mix furiously.
until the mixture has thickened.
Juice and zest the 2 lemons.
Then add the the mixture.
Change the wooden spoon for a whisk and whisk until the mixture has thickened a little bit more.
Leave the mixture to cool down.
When the mixture has cooled, Pour the mixture into your chosen jar and make sure it is air tight.
Keep in the fridge.
You can add it to your corn meal porridge in the mornings, or mix it to butter icing or sandwiched in between your sponge cake. or spread on free from home made toast.
