Carob Cake Bites

Carob Cake Bites

Ingredients:
 1.5 oz Sorghum Flour
1.5 oz Almond Flour
4 oz Carob Powder
2 Tsp GF Baking Powder
2 oz Coconut Sugar or agave nectar
3 oz Pure Sunflower vegan Spread
2 Tsp Ground Chia Seeds
4 Tsp Hot water
100ml Water

First of all add your dry ingredients and give them a quick mix together.
Next add your pure and mix that in well.
Add your chia egg (hot water and ground chia seeds) and mix it all together.

If you think it wont be chocolaty enough for you add some more at this point and beat it altogether.
Now gradually add the water and mix it in each time  you add some more.
Line a little tray with foil.

Fill the tray with your cake batter.

Pop it into the oven on gas mark 4 on the top shelf for 20 minutes

Check on the cake, If there are no cracks on the top or hasn't gone dark or if it still feels stodgy leave it in the oven for another 5-10 minutes.

Do the knife test - stick the knife in if it comes out with cake batter on it means it isn't ready if it is clean it means it is done!

Take it out of the oven and leave it to cool.

Turn the cake out and it should slide out of the foil with nothing sticking at all.

Leave this to fully cool then refrigerate over night.

Cut into bite sized chunks and enjoy as a snack or dessert totally up to you.

Or double up for a birthday cake! and add Jam for the middle and a lovely spread of chocolate carob cheesecake for the top YUM!
