Gooey Mint Chocolate Brownies
Vegan, Gluten Free, Wheat Free, Soya Free, Rice Free, Refined Sugar Free, Crohns, Coeliacs, Endometriosis Safe.
This recipe is for another lovely Endo-sister, and I am very thankful for her suggestion that i try to make brownies because these are delicious! (if i do say so myself) Gooey in the middle and cakey on the outside Perfect! They are very quick to make too. The mint can be left out but i find it makes the brownies quite refreshing, Also Peppermint is excellent for IBS sufferers so thats a Bonus too!
Ingredients:
4oz Almond Flour
3oz Coconut Sugar or Agave Nectar
Pinch of Salt (Optional)
65ml Extra Virgin Olive Oil or 2oz Coconut Oil
1 Tsp Vanilla Paste
2-3 Drops of Peppermint Extract
1 Tsp Xanthan Gum
2 Tsp Arrowroot Powder
1/4 tsp GF Baking Powder
1/4 Bicarbonate of Soda
2.5oz Carob Powder
2 Tsp Heaped Ground Chia Seed
4 Tsp Hot Water
4 Tbls Hazelnut Milk
2 Tbls Hazelnut Milk
Optional Additions:
3oz Chocolate Chunks (Recipe HERE)
2oz Chopped Nuts
3oz Mixed Fruit
Mix your chia and hot water in a little pot and leave it to one side until its needed.
Start your brownies by sifting your carob powder and sugar/nectar into a bowl to break up any lumps. Also add your optional additions here too.
Then add all of the rest of the ingredients except for your chia mix and milks.
Mix That all together untill your mix resembles chocolate rubble.
Now add your 4 Tbls Hazelnut milk and mix.
You should have a very thick paste now.
Add your chia egg and mix that in together.
Then add your last 2 Tbls Hazelnut milk and mix.
You should be left with a thick gooey chocolate batter.
It is safe to lick the bowl as there are no eggs in it so let yourself be wild and drive straight in ;)
Scrape the mixture into a Greased baking paper lined tin or foil if you haven't got any baking paper.
Then pop it into the oven on gas mark 5 for 20 minutes. Check it at 15 minutes and turn the tin just to make sure it cooks evenly.
When it is cooked leave it to cool on the side.
Don't try and peel the lining off the brownies when it is warm as it might take the cake with it
.
Once cooled you can tear the lining off the brownies and cut them into bars or squares and eat them. YUM!
And here they are Cakey on the outside Gooey on the inside!
