Oat & Cornmeal Pastry Recipe

Oat, Cornmeal & Buckwheat Pastry
Vegan, Gluten Free, Wheat Free, Soya Free, Rice Free, Refined Sugar Free, Yeast Free.
Endometriosis, Crohns & Celiac Disease Safe.

This was my first experiment making pastry. I wanted to try and make it act like normal pastry.
I was suprised that it WORKED!! I was all smiles let me tell you! It is gorgeous!

Serves:
2 People
Ingredients:
1oz Cornmeal Porridge (Recipe Here)
2oz Gluten Free Oat Porridge (Recipe Here)
2oz buckwheat flour ( DIY Recipe Here)
1 tsp xanthan gum
1 Tsp Parsley



  First make your GF oat porridge and cornmeal porridge very thick and sticky.













Now combine both porridges together.


Add the Buckwheat flour, parsley and xanthan gum and mix.




Once your dough has come together like this,  sprinkle flour onto your work surface and onto your dough, do not knead as it will turn very sticky.

Roll the dough out with a rolling pin rub the rolling pin with flour first before rolling.








If your dough is still too sticky to roll add a bit more flour.

Or alternatively you can put the dough onto a sheet of cling film with another sheet ontop and roll it like that and it will be easier to top pies and making pasties.




your pastry is done and can use it for all sorts of recipes, add garlic italian herbs, chives, parsley, salt or pepper to add taste for savoury pastry and for a sweet pastry add 2 tbl spoons of unrefined sugar.
